I understand you may like Buffalo chicken with blue cheese more than with ranch, however, for this recipe, we get both! Listed below are all the garnishes or toppings you will need for this salad:

  1. Slow Cooker Buffalo Chicken
  2. Diced avocado
  3. Diced red onion
  4. Blue cheese falls apart
  5. Cherry tomatoes
  6. Home-made ranch

If you are making this immediately after preparing the buffalo chicken, you will want to ensure the chicken is at room temperature level or chilled prior to topping it over the lettuce; or else, the salad will wilt.

Since Avocadoes get browned very quickly, and the kids won’t like that. If you plan to pack them with the salad, it is better to wait for the morning you plan to eat this for lunch then add them prior to packing into a lunch bag.

To avoid getting the salad soaked, the ranch dressing can be packed into sauce containers and then pack with the remainder of the lunch.

Ingredients

  1. 2 cups cooked Buffalo Chicken
  2. 1 head Iceberg lettuce, chopped
  3. ½ cup Blue cheese crumbles
  4. 2 hard-boiled eggs, sliced
  5. Ranch dressing
  6. 1 avocado, peeled, cored, and diced
  7. Buffalo sauce, for drizzling

Instructions

  1. Put the sliced lettuce into a large serving bowl.
  2. Place the sliced avocado over the lettuce in one row, do this with the remaining ingredients, finishing with the sliced eggs.
  3. Drizzle with Ranch dressing and additional buffalo sauce.
  4. Then Toss to mix.
