With the combination of plain Greek yogurt and overripe bananas, you have a dish for the lightest, cake-like banana bread that you’ll ever taste.

Greek yogurt has an acidic nature and it works just like buttermilk to keep and make baked items good, waffles and pancakes moist. Overripe bananas have a high moisture content and the 2 of these together work like a magic for this fast bread.

What do I imply when I say ripe bananas? I mean the brown, ugly, speckled things nobody dares to touch. While they may not be enjoyable to eat again in this state, they’re very sweet, good, and soft for a variety of baked items such as cookies, muffins, or shakes/smoothies.

In about an hour prior to you prepare to bake, set out the butter, eggs, and yogurt. Make sure all ingredients are at room temperature to ensure an even, smooth batter that yields light tender baked goods.

Put the slices into a freezer-safe zip bag and freeze for approximately 2 months.

Remove the wanted quantity from the freezer and allow to thaw at room temperature level when you’re all set for a slice.

Description

With the combination of plain Greek yogurt and overripe bananas, you have a dish for the lightest, cake-like banana bread that you’ll ever taste.


Ingredients

Scale
  • ½ cup Greek yogurt
  • 1 cup semi-sweet chocolate chips, divided
  • ½ cup butter, (equivalent to 1 stick of butter) melted
  • 1 teaspoon baking soda
  • 1 and ½ cups all-purpose flour
  • ½ cup white sugar
  • 2 large eggs
  • 2 large over-ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Instructions

  1. The oven should be preheated to 350 degrees F and line the loaf pan with parchment paper or grease it.
  2. Then mash the bananas in a big bowl. Add the melted butter, Greek yogurt, and eggs. Whisk to mix perfectly. Add the vanilla and sugar, then mix very well.
  3. Whisk the flour, baking soda, and salt in another big bowl.
  4. Gradually mix the dry ingredients into the wet ingredients until the two are perfectly combined. Stir ¾ cup of the chocolate chips.
  5. Pour batter into greased loaf pan and top with remaining chocolate chips.
  6. Bake, for 55 minutes till an inserted toothpick in the center comes out clean. If the top of your loaf is getting too brown, cover it with a foil tent.
  7. Remove loaf from the oven and allow it to cool for 10-15 minutes before removing it from the pan and slicing.
